About the Role

OTOTO is seeking a talented and passionate Executive Chef with strong sushi-making skills to lead our culinary team. This role combines the artistry of Japanese cuisine — including nigiri, maki, and sashimi — with executive-level kitchen management. The ideal candidate will bring creativity, leadership, and technical expertise to uphold our standards and help elevate our reputation as one of the top Japanese dining destinations in Denver.

Key Responsibilities

  • Manage and oversee all aspects of kitchen operations
  • Lead menu planning and recipe development with a focus on sushi and Japanese cuisine
  • Supervise and train kitchen staff on cooking techniques, sushi preparation, and food safety
  • Ensure consistency, quality, and presentation of all dishes
  • Prepare all types of sushi, including maki, nigiri, sashimi, and Japanese appetizers
  • Maintain high standards of hygiene and cleanliness in all prep and work areas
  • Monitor inventory levels and manage food stock and orders
  • Work closely with FOH to ensure seamless guest service
  • Collaborate with the culinary team to develop new sushi offerings and seasonal specials
  • Support kitchen needs during staffing shortages, including flexibility with schedules
  • Contribute to a positive and collaborative team culture

Skills & Qualifications

  • Proven experience as an Executive Chef and Senior Sushi Chef
  • Expertise in preparing various types of sushi and Japanese dishes
  • Deep knowledge of raw fish handling, rice preparation, knife techniques, and traditional ingredients
  • Strong leadership and communication skills
  • Ability to manage kitchen operations in a fast-paced environment
  • Detail-oriented with a commitment to quality and consistency
  • Knowledge of food safety standards and compliance
  • Ability to multitask and meet deadlines under pressure
  • Flexibility with scheduling, especially on high-volume days (e.g., Valentine’s Day, Mother’s Day)
