Summary

 

The Wood Fire-Pit Chef is a hands-on, integral position responsible for the critical function of live-fire cooking and meat preparation. This role requires exceptional punctuality, reliability, and dedication to food safety. The successful candidate will manage all aspects of the smoking process, from raw meat preparation to final product and fire management, contributing significantly to both kitchen operations and catering services. This is a demanding, physical position suitable for an experienced, self-motivated culinary professional.

 

Key Responsibilities

 

  • Fire Management: Maintain, manage, and tend live wood fires and smokers throughout the shift to ensure precise and consistent temperatures for optimal cooking results. Includes routine stacking and splitting of firewood, handling axes, and wood splitters.
  • Meat Preparation: Execute detailed preparation of raw meats, including trimming, grinding, and custom seasoning meats according to established recipes.
  • Smoking Operations: Efficiently load and unload smokers, monitor product temperatures, and manage the full smoking cycle.
  • General Kitchen Duties: Work the service line, assist with inventory control, receive and check in product deliveries, and contribute to general kitchen teamwork.
  • Catering & Events: Assist in the preparation, setup, and execution of offsite catering events as needed.
  • Safety & Compliance: Adhere strictly to all safety protocols regarding knife use, heavy equipment operation, and food handling. (ServSafe certification is highly desired.)

 

Requirements & Qualifications

 

  • Experience: Proven culinary experience with live-fire cooking methods (preferred).
  • Physical Stamina: Must have the ability to stand for a full shift (8-10 hours).
  • Physical Strength: Ability to lift and carry cases of meat up to 80 lbs frequently.
  • Work Environment: Willingness and ability to work in environments with significant temperature variations (hot near the smokers/fire, cold during loading/unloading and storage).
  • Safety Handling: Comfort and proficiency in the safe handling of potentially dangerous tools, including knives, axes, wood splitters, and raw/cooked meats.
  • Communication: Ability to read, write, and communicate effectively to manage processes, coordinate with team members, and handle inventory.
  • Certification: ServSafe certification or an equivalent food handler certification is a significant asset.
