Louma is brand-newbakery in West LA with a mission: blending artisanal baking with social impact. Equipped with top-notch equipment, we’re creating a space where creativity, craftsmanship, and community come together - and we’re looking for passionate bakers to join our launch team.

In our kitchen, we craft breads (sourdough, baguettes, rye), classic pastries (Danish and French-style), and seasonal to-go offerings. Overview:

Join our growing team at Louma Bakery, where craftsmanship meets passion. We are seeking an experienced and hands-on Head Baker to lead our bakery operations and oversee the production of exceptional artisanal breads and pastries. This role is ideal for a skilled baker who thrives in a fast-paced environment, values precision and consistency, and enjoys leading a team with positivity and purpose.

Our Head Baker plays a key role in maintaining the highest quality standards while contributing creatively to menu development, with a focus on organic, locally sourced ingredients and Levantine-inspired flavors.

Responsibilities:

Leadership & Supervision

  • Lead, motivate, and support a team of bakers in a collaborative and respectful work environment
  • Oversee daily bakery operations, task delegation, and workflow efficiency

Production & Quality Control

  • Execute and supervise the production of artisanal breads and laminated pastries
  • Maintain consistent quality, presentation, and flavor across all products
  • Conduct regular taste tests and product inspections to ensure consistency, excellence, and adherence to bakery standards

Recipe Development

  • Develop and refine bread and pastry recipes
  • Create seasonal offerings using locally available ingredients and Levantine flavor profiles

Production Planning & Inventory

  • Plan daily and weekly production schedules based on sales trends
  • Manage inventory to minimize waste and ensure freshness
  • Understand and manage food cost calculations

Training & Team Development

  • Train new hires and provide ongoing coaching to strengthen skills and consistency

Hygiene & Safety

  • Ensure compliance with all health, hygiene, and food safety regulations
  • Maintain ServSafe standards and oversee sanitation procedures
  • Coordinate back-of-house support staff as needed

Collaboration

  • Work closely with front-of-house staff to respond to customer feedback
  • Collaborate effectively with consultants and management

                                              

Requirements:

  • Minimum 2 years of experience as a Head Baker or similar leadership role in an artisan bakery
  • Strong experience in both bread and laminated pastry production (required)
  • Deep understanding of artisanal baking techniques and ingredient functionality
  • Experience with recipe development and menu innovation
  • Knowledge of food cost management
  • Strong leadership, communication, and organizational skills
  • Ability to work efficiently in a fast-paced environment
  • Knowledge of U.S. food safety regulations
