The Role

We are seeking a Restaurant Manager to lead and shape the guest experience of an intimate omakase counter.

This is a hands-on leadership role for someone who thrives in high-touch, detail-driven environments. The format is small. Expectations are high. Standards are non-negotiable.

The Restaurant Manager will oversee service standards, reservations, operational systems, and overall room energy each night.

Core Responsibilities
  • Lead nightly service with authority and composure
  • Develop and uphold refined hospitality standards
  • Oversee reservation systems and guest communication
  • Manage VIP relationships and guest retention
  • Train and hold team accountable to service precision
  • Monitor labor, scheduling, and cost controls
  • Manage vendor relationships and inventory oversight
  • Maintain brand consistency and atmosphere
Qualifications
  • 2+ years fine dining management experience
  • Experience in tasting menu or chef-driven environments strongly preferred
  • Strong wine knowledge required; sake knowledge preferred
  • Financial literacy (P&L understanding required)
  • Calm, confident leadership style
  • Highly organized and detail-oriented
  • Professional, polished presence
Compensation
  • $70,000–$80,000 base salary (based on experience)
  • Participation in gratuities/tip pool
  • Performance-based growth opportunity

Total compensation will be competitive with leading fine dining establishments.
