Position Summary

We’re hiring a Sushi Chef to execute high-level sushi service across both omakase and main dining room service. This role requires strong fundamentals, refined knife work, composure under pressure, and excellent coordination with the kitchen and FOH teams.

Responsibilities
  • Execute nigiri, sashimi, hand rolls, and plated sushi items to spec with speed and consistency
  • Support and/or lead omakase service: pacing, portioning, temperature control, and course progression
  • Execute main dining room sushi service cleanly and efficiently, coordinating timing with tickets and the pass
  • Break down fish and handle product properly (receiving, storage, rotation, yield awareness)
  • Maintain sushi rice standards (seasoning, temperature, texture, timing)
  • Maintain immaculate station standards: labeling, FIFO, sanitation, tool care
  • Communicate clearly with BOH/FOH to ensure smooth service flow across both experiences
  • Support training and development of sushi assistants/helpers as needed
Qualifications
  • 3+ years of sushi experience required (omakase experience strongly preferred)
  • Confident knife skills and consistent nigiri shaping
  • Strong understanding of food safety and raw fish handling standards
  • Organized, clean, and steady under pressure
  • Reliable, punctual, team-first mindset
  • Able to stand for long periods and lift up to 50 lbs
