Job Details

The Dinex Group is seeking a passionate and hospitality-driven Sushi Chef to join Joji Box — the takeaway and catering extension of our Michelin-starred omakase experience.

This role is ideal for a chef who not only possesses strong technical sushi skills, but also thrives in guest-facing environments and understands the importance of creating memorable hospitality experiences. In addition to daily sushi production, this position will support luxury offsite events, live chef stations, and interactive guest experiences throughout New York City.

The ideal candidate is warm, polished, professional, and comfortable engaging directly with guests while preparing sushi in live-event settings. We are looking for someone who can represent the Joji brand with confidence, grace, and genuine hospitality.

Responsibilities Include (but are not limited to):
  • Preparing a variety of sushi offerings including Nigiri, Sashimi, Maki, Temaki, and Chirashi with precision and consistency
  • Supporting daily production and service for Joji Box operations and catering
  • Executing sushi preparation at luxury offsite events and live chef stations
  • Interacting with guests in a warm, engaging, and professional manner during live culinary experiences
  • Maintaining impeccable food safety, sanitation, and organizational standards
  • Assisting with fish fabrication and preparation while upholding the highest quality standards
  • Collaborating closely with the culinary and events teams to ensure flawless execution
Schedule:

Full-time schedule; open availability preferred. Hours and days may vary based on restaurant operations and event needs. Additional details will be discussed during the interview process.

Requirements:
  • Ability to follow exact recipes, ingredient specifications, and preparation procedures
  • Strong foundational sushi skills including Maki, Nigiri, Sashimi, Temaki, and Chirashi preparation
  • Comfort working in fast-paced, guest-facing environments
  • Ability to prepare sushi during offsite events and live culinary activations
  • Knowledge of fish fabrication and fish butchery techniques
  • Strong attention to detail and commitment to cleanliness, organization, and sanitation
  • Professional demeanor with excellent communication and hospitality skills
Skills, Abilities & Experience:
  • 2+ years of experience working in a sushi restaurant or high-level Japanese culinary environment
  • Experience with catering, events, omakase, or interactive dining experiences is strongly preferred
  • Previous New York City restaurant experience is a plus, but not required
  • Candidates with strong hospitality instincts and a warm, guest-centric approach are highly encouraged to apply
Education/Credentials:
  • NYC Food Protection Certification preferred
