The Role

We are hiring a Chef de Cuisine who understands that leadership is both cultural and operational.

This is not just a creative position. This is a hands-on leadership role.

You will be responsible for the day-to-day execution of the kitchen, including team leadership, systems, quality, and consistency. We are looking for someone who can lead from the line, build strong teams, and maintain a high-performing kitchen without sacrificing sustainability.

What You’ll Do
  • Maintain and enforce high culinary standards across all service periods
  • Oversee daily kitchen operations including prep, service, and closing
  • Ensure consistency, quality, and execution of all dishes
  • Support menu execution and provide operational feedback to leadership
  • Ensure consistency and accuracy in the execution of all menu items
  • Manage food cost, labor, and overall kitchen performance
  • Oversee and manage weekly inventory and product accountability
  • Build and maintain prep systems, organization, and station structure
  • Hire, train, mentor, and develop kitchen team members
  • Lead service with clarity, urgency, and strong communication
  • Maintain strong collaboration with front-of-house leadership
  • Uphold systems, structure, and accountability across the kitchen
  • Lead with humility, clarity, and emotional intelligence

Summary of Key Responsibilities

Responsibilities and essential job functions include but are not limited to the following:

  • Oversee all kitchen operations, including staffing, systems, and daily execution
  • Maintain accountability for food quality, consistency, and presentation
  • Manage food cost, labor cost, and overall kitchen financial performance
  • Develop and maintain prep systems, ordering processes, and inventory controls
  • Hire, train, mentor, and retain kitchen leadership and team members
  • Ensure compliance with all food safety, sanitation, and health regulations
  • Establish and maintain kitchen culture aligned with Noko values
  • Collaborate with ownership and leadership on long-term strategy and growth
  • Monitor and improve kitchen efficiency, systems, and workflows
  • Maintain equipment and oversee kitchen maintenance needs
  • Lead by example during service and support team through high-volume periods
  • Complete administrative responsibilities including scheduling, ordering, and reporting
  • Attend leadership meetings and contribute to continuous improvement

  • Proven experience as a Chef de Cuisine, Sous Chef, or equivalent leadership role

  • Strong organizational and communication skills
  • Ability to remain calm and decisive under pressure
  • Understanding of food cost, labor management, and inventory control
  • Knowledge of food safety, sanitation, and health regulations
  • Ability to work days, nights, weekends, and holidays
  • Ability to model and act in accordance with Noko guiding principles
Physical Requirements
  • Constant standing and movement
  • Occasional exposure to heat, cold, and kitchen environments
  • Occasional lifting or carrying up to 50 lbs
  • Frequent bending, reaching, and repetitive motion
  • Continuous communication with team members
