Why This Role Matters
The Pastry Sous Chef is responsible for helping lead the daily execution of our pastry program. This role ensures that production is consistent, staff are supported, and every product meets our standards before it leaves the kitchen.
This is a hands-on leadership position in a fast-paced, high-volume environment where attention to detail and accountability are essential.
Key Responsibilities
Oversee daily pastry production, ensuring quality, consistency, and efficiency
Scale, prepare, and execute recipes to exact specifications
Work shoulder to shoulder to train, mentor, and supervise pastry staff
Assist in developing new recipes and seasonal menu items
Manage inventory, purchasing needs, and production planning
Manage scheduling and staffing the department with the Executive Pastry Chef
Maintain strict sanitation, safety, and compliance standards
Support off-site catering events and high-volume production periods
Qualifications
Minimum of 2 years of progressive pastry or baking experience in a leadership position, preferably in catering, hotel, or fine dining environments
Proven leadership ability with experience training and motivating a team
Strong organizational and communication skills
Hands-on approach with the ability to work alongside the team in production
Working knowledge of Spanish preferred
Flexible availability including mornings, evenings, weekends, and holidays
Work Environment
This role is based in our Morton Grove production kitchen and supports catering events throughout Chicago. The environment is fast-paced and production-driven, with increased volume during peak seasons. Precision, cleanliness, and teamwork are expected at all times.
